Chicken Cutlet with Spicy Arrabbiata Sauce

Chicken can be sautéed, baked or fried.

Ingredients

  • 5 lbs. Chicken Tenderloins #342564
  • 2 qt. Spicy Arrabbiata Sauce, see separate recipe
  • 8 oz. mozzarella cheese
  • 2 oz. parmesan cheese
  • 1 tbls. fresh chopped herbs as garnish
  • 3 oz. canola oil for sautéing chicken

Instructions

  1. Step 1
    Sauté Chicken Tenderloins #342564 in oil until the internal temp reaches a minimum of 165°.
  2. Step 2
    Top the chicken with the hot Arrabbiata sauce, them cover with cheese.
  3. Step 3
    Place under the cheese melter to gratinée and crisp the cheese.
  4. Step 4
    Garnish with fresh herbs and serve.
